                 Frozen foods are often stored at temperatures around −18°C, as a commercial standard for food preservation. With the purpose of dried and frozen foods to be stable for long periods of storage, the products should not suffer structural and chemical changes. Glass-transition temperature is used as an indicator of the molecular mobility, which changes diffusivity of molecular species. Determination and understanding of glass-transition temperature is especially important to determine the best storage or processing condition for a frozen or dried product, as it has impact on food structure and safety, in addition to impacts on energy consumption for drying and freezing processes.
